Blender Sourdough Cottage Cheese Pancakes

Since I make my own Sourdough bread, I have a lot of leftover discard. So, I created this recipe and added cottage cheese, eggs and milk to add extra protein. And, the best part is that they're made in a blender, which makes them super simple. Serve with some nut butter and maple syrup, and you have the most perfect, healthy, delicious Sunday breakfast.

Yields: 2-3 servings
Ingredients
1 /2 cup all purpose flour
1 tsp. baking powder
1 cup cottage cheese
2 eggs
2 tsp. maple syrup
1/2 cup sourdough starter
1/4 cup milk
1 tsp. vanilla extract
pinch salt
1 - 2 Tbsp. coconut oil
Instructions
Add all the ingredients except the coconut oil to a blender.
Pulse a few times. Remove the lid and scrape down the sides. Blend for 1 minute. Scrape the sides again and blend one more time.
Heat a nonstick skillet on medium-high heat.
When hot, evenly distribute 2-3 tsp. of coconut oil onto the skillet.
Pour approximately 1/4 cup of batter for each pancake.
Turn heat down to medium. Cook until the pancakes start to bubble and the outside edges look slightly dry.
Flip pancakes and cook on the other side for 2 minutes.
Serve with nut butter (for more protein), maple syrup and fruit.
