This is the perfect Valentine's Day recipe. It's not only healthy and delicious, but each packet is shaped like a half heart, so when put together, they look like a heart. Bon appetite!

Ingredients
1/2 small zucchini, julienned
1/2 small yellow squash, julienned
1 small leek, sliced thin
1 Tbsp. + 1 teaspoon olive oil, divided
3/4 tsp. Kosher salt, divided
1 tsp. fresh dill, divided
2 (4 to 6-ounce) salmon fillets
2 slices lemon
2 Tbsp. dry white wine or vegetable broth
Instructions
Preheat oven to 475F.
In a medium bowl combine the vegetables (you should have about 1 cup). Toss with 1 tsp. olive oil and season with 1/2 tsp. salt and some pepper.
Take a rectangular piece of parchment paper fold in half (the short side) and then open it up (like a book). Divide the seasoned vegetables between the 2 papers, placing them on one side of the center.
Lay the salmon fillets on top of the vegetables and coat each with a ¼ tsp. of olive oil, and sprinkle with the other 1/4 teaspoon of salt (divided).
Sprinkle each packet with dill.
Place a lemon slice on top of each fish fillet.
Pour 1 tablespoon of white wine or vegetable broth onto each piece of fish.
Fold the paper in half around the fish, and fold to make a half heart shape. The closure needs to be very secure so the steam will not escape during the cooking process.
Place on a sheet pan (in case your packet leaks).
Bake in the preheated oven for 10 - 12 minutes. Remove from the oven, place on serving dishes (in the paper) and serve immediately.
