Summer Peach Salsa + VIDEO

One of my favorite things about Summer is all the fresh fruits and vegetables that are abundantly available. I try and shop weekly at a Farmer's Market so I can keep an eye on what's in-season. Plus, the food is SO MUCH better and lasts longer because it's so fresh. And, I get inspired to cook and use what I've purchased. Hence how this Summer Peach Salsa was created.

Servings: Makes approximately 2 cups
Ingredients
1 lime, zested and juiced
1 Tbsp. extra virgin olive oil
1 tsp, honey (if your peaches aren't ripe, you may need to add a little more)
1/2 tsp. salt
1 ear of corn, kernels cut off
2 large peaches, pitted and diced small (1/4 to 1/3 inch pieces)
10-15 cherry tomatoes, sliced in half or quarters, depending on their size
2-3 scallions, sliced (you can also use 1/4 diced red onion)
1/2 jalapeno, diced very small (if spicy, remove the pith before dicing)
2-4 large basil leaves, chiffonade (you could also use cilantro)
Instructions
In a large bowl, zest the lime. Then, slice in half and juice both halves into the bowl.
Add the olive oil, honey and salt and whisk together.
Cut the corn kernels off the cob and add to the bowl (with the dressing) and toss lightly (the lime juice will break down the corn so it's not as raw tasting).
Add the diced peaches, sliced cherry tomatoes, sliced scallions and diced jalapeno.
Using a rubber spatula, thoroughly mix all ingredients.
Add basil and toss in gently.
Serve with tortilla chips. Or, serve with any protein, such as chicken, pork chops, fish, salmon or shrimp.
