Simple Elegant Salmon

Salmon (or any fish) is one of the easiest things to get on the dinner table because it takes less than 15 minutes to cook. Add a frozen vegetable and a rice pack that takes 90 seconds in the microwave, and you have a dinner in less than 20 minutes. Below is my go-to recipe, but you can use any fresh herbs or spices you have on-hand.

Servings: 3
Ingredients
· 1 lb. salmon side (I love wild caught Sockeye salmon)
· 1 Tbsp. extra virgin olive oil
· 1/2 to 3/4 tsp. Kosher salt
· 1/4 tsp. Freshly ground coarse black pepper
· 1 lemon, zested + sliced for garnish
· 2 Tbsp. chopped fresh dill
· 1 Tbsp. chopped fresh parsley
Instructions
1. Place salmon onto a baking sheet covered in parchment paper or aluminum foil.
Pat dry with a paper towel to absorb any excess water.
Drizzle with olive oil and spread out with your fingers or a pastry brush.
Sprinkle with salt and pepper.
Zest a lemon over top of the salmon so it covers it evenly. Set lemon aside.
Chop up the herbs of your choice (I like using dill with some parsley) and sprinkle evenly onto the salmon.
Slice the lemon and place 4-5 rounds onto the salmon (this looks beautiful and can be served with the salmon).
NOTE: If you have 4 people, you may want to purchase a side of salmon that's 1 1/4 to 1 1/2 lbs. and increase the other ingredients accordingly.
